Lunch: Asian chicken or tofu salad dressed with ginger scallion aioli over mixed baby greens, fresh fruit and creme
Dinner: Green salad with cilantro dressing, chili with beef and pork or vegetarian version (vegan available) with cheddar cheese and sour cream, scallion and poblano corn bread, banana custard
Lunch: Thai green curry with chicken or tofu, jasmine rice, tropical yogurt
Dinner: Green salad with garlic vinaigrette, seared salmon or roasted tofu brined in a ginger reduction, wasabi mashed potatoes, grilled vegetables, coconut cake
Lunch: Southwest frittata with or without bacon, roasted red bliss potatoes, pineapple yogurt
Dinner: Green salad with balsamic vinaigrette, penne with grilled shrimp or tofu in tomato vodka sauce, chocolate espresso bars
