Monday, March 3rd
Dinner – Green salad, Garlic vinaigrette, Roasted Chicken or Tofu w/ lemon caper sauce, maple glazed carrots, and garlic mashed potatoes. Dessert is Cinnamon Crumble Cake.
Tuesday, March 4th
Lunch – Southwestern frittata w/ or w/o bacon and herb roasted potatoes. Dessert is Chocolate chip cookies.
Dinner – Green Salad w/ carrot vinaigrette, Grilled Salmon or Tofu in a brined ginger reduction, with coconut jasmine rice and mixed vegetable stir fry. Dessert is Fresh Fruit with lemongrass milk.
Wednesday, March 5th
Lunch – Penne and broccoli dressed in roasted garlic oil and parmesan w/ balsamic chicken or tofu. Chocolate Expresso Bars!
Dinner – Green salad, Garlic vinaigrette, Thai Red Curry w/ Chicken or Tofu w/ jasmine rice (VEGAN). Dessert is Berry Crisp.
Thursday, March 6th
Lunch – Broccoli and cheddar bisque w/ caramelized onion mushroom flatbread. Peanut butter cookies!
Dinner – Green Salad, balsamic vinaigrette, Penne w/ Tomato Vodka Sauce Grilled Shrimp or tofu. Carrot cake!
