Monday Jan. 31st

Dinner – Green Salad w/ Dill vin, Herb Roasted Chicken/ Tofu, Garlic Mashed Potato, Maple Glazed Carrots, Caramelized Shallot Sauce
Dessert – Chocolate Cake

Tuesday Feb. 1st

Lunch – Ancho Mole Enchiladas w/ Chicken or Tofu
Dessert – Mango Yogurt

Dinner – Green Salad w/ Basil vin Salmon/ roasted Tofu Gemeli w/ Citrus cream sauce, Asparagus
Dessert – Banana Cake

Wednesday Feb. 2nd

Lunch- Nappa Cabbage, Bok Choy, and Shitake Stir-fry w/ Flank Steak or Tofu, Jasmine Rice
Dessert- Fresh Fruit

Dinner- Green Salad w/ Curry Dressing, Tadka Dal w/ Rice
Dessert- Carrot Cake

Thursday Feb. 3rd

Lunch- Potato Leek Bisque w/ Focaccia
Dessert- Brownies

Dinner- Green Salad w/ Toasted Parm, Lasagna w/ Beef and Italian Sausage Ragu or  Veg. w/ Portabella and Marinara
Dessert- Lemon Poppy Cake
