Monday April 11th
Dinner –Green Salad w/ Lemon vin, Moroccan Spice Rubbed Chicken or Tofu w/ Couscous, Roasted Cauliflower, Refreshing Cucumber Salad Garnish
Dessert – Lemon Raspberry Cake

Tuesday April 12th
Lunch – Verde Chicken/Tofu Enchiladas
Dessert – Mango Yogurt

Dinner –Green Salad w/ Dill Dressing Seared Salmon or Tofu and Gemeli w/ Asparagus and Citrus Cream Sauce
Dessert – Triple Chocolate Cake

Wednesday April 13th
Lunch- Bow Tie Salad w/ Sautéed Corn, Tomato, Cucumber, Lemon Dill vin, Chicken/Tofu
Dessert- Strawberry Short Cake

Dinner- Green Salad w/ Cilantro Dressing, Channa Masala w/ Rice
Dessert- Banana Cream Pie

Thursday April 14th
Lunch- Minestrone w/ Herb Focaccia
Dessert- Peanut Butter Chocolate Chip Cookies

Dinner- Green Salad w/Basil Vinaigrette. Lasagna w/ Beef and Italian Sausage Ragu or Vega table w/Portabella and Marinara
Dessert- Funny Bone Cake
