MONDAY
DINNER- Greens w/ Sherry Vin. Herb Roasted Chicken or Tofu, Brown Butter and Caramelized Shallot Infused Cauliflower Purée, Black Wild Rice, Oven Roasted Tomato Relish
DES- Triple Chocolate Cake

WEDNESDAY
LUNCH- Spicy Miso Ramen w/ or w/ out Sliced Pork Tenderloin. Topped with Seaweed, Shoyu Soft-Boiled Egg, Garlic and Togarashi Oil, Black Fungus, and Scallions
DES- Coconut Cookies
DINNER- Greens w/ Balsamic Vin. Baked Rigatoni w/ Sweet Italian Sausage and Beef Ragu or Portobello w/ Marinara. Topped w/ Mozzarella and Ricotta and Finished in the Oven

THURSDAY
LUNCH- Minestrone w/ Herb Focaccia. Garnished w/ Basil Oil & Parmesan. VEGAN SOUP
DES- Trail Mix Bars
DINNER- Greens w/ Charred Tomato Vin. Creole Shrimp or Tofu. (Onion, Bell Pepper, Celery, Garlic, Tomato & Cayene) w/ Trinity Dirty Rice. VEGAN ENTREE
