MONDAY-
DINNER- Greens w/ Red Wine Vin. Moroccan Spice Rubbed Chicken or Tofu, Roasted Cauliflower & Couscous. Garnished w/ Tomato, Cucumber, Feta & Red Onion Salad. VEGAN ENTREE.
DESSERT- Carrot Cake

TUESDAY-
LUNCH- Ancho Mole, Roasted Chicken or Tofu Enchiladas
DESSERT- Mango Yogurt
DINNER- Greens w/ Carrot Ginger Vin.  Ginger Brined, Charred Salmon or Tofu, Wasabi Mashed Potato, Asparagus and Shiitake Stir-Fry, Shiitake Reduction
DESSERT- Berry Crisp

WEDNESDAY-
LUNCH- Gourmet Grilled Cheese. Gruyere Cheese, Caramelized Onion, Green Apple, Bacon or Soy Bacon
DESSERT- Berry Yogurt
DINNER- Greens w/ Balsamic Vin. Spaghetti w/ Italian Sausage Ragu or Vegetarian Sausage & Marinara. Garnished w/ Fresh Basil and Parmesan
DESSERT- Strawberry & Chocolate Cheese Cake

THURSDAY-
LUNCH- Tortilla Soup. Roasted Chicken or Vegetarian. Chilies, Tomato, Black Beans Simmered in Chicken or Vegetable Broth. Garnished w/ Avocado, Cilantro & Fried Tortilla Strips. Served w/ Herb Focaccia. VEGAN SOUP
DESSERT- Coconut Cookies
DINNER- Greens w/ Creamy Cilantro Dressing. Buttermilk, Country Fried Chicken or Tempeh Tacos w/ Maple and Soy Collard Greens & Chipotle Ranch Creme
